Ponerlas durante media hora dentro de un bol con agua y sal. De esta manera las berenjenas pierden la amargura. Escurrirlas. Poner un hilo de aceite en el fondo de una bandeja de horno, repartir las berenjenas. Cortar el tomate en rodajas del mismo grosor y poner una encima de cada berenjena. Espolvorear un poco de or\u00e9gano por encima, regar con un hilo de aceite de oliva y poner en el horno, previamente calentado a 200 grados y encendido de arriba y de abajo. Vigilar la cocci\u00f3n y al cabo de unos 30 minutos, espolvorear el queso emmental y un pedazo de rulo de cabra sobre cada rodaja. Volver a poner en el horno y dejarlo unos minutos m\u00e1s para que se derrita el queso.
