Fue <strong>Pierre Desfontaines<\/strong>, pastelero de la casa de reposter\u00eda parisina: <em>Ladur\u00e9e<\/em>, quien ide\u00f3 utilizar dos macarons y unirlos con ganache.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La receta se transforma en celebridad ya en nuestro tiempo. Tamizamos ambos ingredientes. Hacer el proceso tres veces.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Con una barillas, manuales o el\u00e9ctricas, <strong>batimos las claras de huevo <\/strong>hasta que est\u00e9n a punto de montarse. En ese momento, agregamos el az\u00facar y seguimos batiendo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Al incorporar el az\u00facar, agregamos el <strong>colorante en<\/strong> <strong>gel <\/strong>del color de nuestra elecci\u00f3n.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Seguir batiendo hasta obtener unas <strong>claras perfectamente montadas<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A\u00f1ade a las claras montadas, la <strong>mitad de la mezcla<\/strong> de harina de almendras y az\u00facar impalpable. Incorpora con movimientos envolventes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cuando todo est\u00e9 <strong>casi homog\u00e9neo<\/strong>, incorpora la harina restante. Seguimos mezclando<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Este es uno de los<strong> pasos m\u00e1s delicados de toda la receta<\/strong> y de \u00e9l depende el \u00e9xito de los macarons.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>No deb\u00e9is pasarte de batido<\/strong>, mucho menos quedaros cortos.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignright is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/blog.cocimia.com\/blog\/wp-content\/uploads\/2019\/08\/Punto-de-cinta.jpg\" alt=\"Punto de cinta\" class=\"wp-image-662\" width=\"190\" height=\"270\" srcset=\"https:\/\/www.cocimia.com\/blog\/wp-content\/uploads\/2019\/08\/Punto-de-cinta.jpg 380w, https:\/\/www.cocimia.com\/blog\/wp-content\/uploads\/2019\/08\/Punto-de-cinta-212x300.jpg 212w\" sizes=\"auto, (max-width: 190px) 100vw, 190px\" \/><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Para saber cu\u00e1ndo detenernos, debemos levantar la esp\u00e1tula y la mezcla debe caer de forma uniforme. Ver\u00e9is que se crea una especie de <strong>cinta doblada sobre mezcla, como se ve en la imagen<\/strong>. Se le conoce como punto de cinta y es el que estamos buscando.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Colocamos toda la mezcla en una manga pastelera con una <strong>boquilla n\u00famero 10 o 12<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Utilizando un <strong>tapete para macarons <\/strong>sobre la bandeja de horno, colocamos la manga de forma perpendicular y le damos forma a los macarons.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">El tapete trae una marca del <strong>tama\u00f1o perfecto<\/strong> de cada macarons. No llen\u00e9is de mezcla hasta el borde de la marca, pues crecer\u00e1n.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Al finalizar, le damos unos <strong>peque\u00f1os golpes a la bandeja<\/strong> contra la mesa. Este paso permitir\u00e1 expulsar las burbujas que se hayan podido formar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dejamos secar la mezcla a<strong> temperatura ambiente<\/strong>. El tiempo para este proceso no existe. Depende del factor ambiental, puede ser tan r\u00e1pido como 20 minutos en ambientes calurosos o tres horas en zonas fr\u00edas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Una t\u00e9cnica para acortar este proceso es meterlas al horno a <strong>30\u00b0 C durante 30 minutos<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Para saber cu\u00e1ndo est\u00e9n secas, <strong>tocamos la parte superior con mucho cuidado<\/strong>. Si se aprietan con fuerza, se quebrar\u00e1n.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cuando la superficie est\u00e9 seca, debemos meter al horno precalentado. <strong>180 \u00b0 C ser\u00e1n suficientes<\/strong> para cocinarlas en 10 minutos. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A mitad de tiempo, <strong>abrid el horno para dejar escapar el vapor<\/strong> y verificar el horneado. Si veis que se est\u00e1n tostando, baja la temperatura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">El pie del macarons, esa parte con <strong>textura espumosa que aparece durante el horneado<\/strong>, debe ser firme. Probablemente, durante vuestros primeros macarons, esa parte bajar\u00e1. Sin embargo, aqu\u00ed os dejaremos unos trucos para facilitaros el proceso:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00b7&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;El <strong>tamizado de la harina y es az\u00facar <\/strong>es fundamental. No omit\u00e1is este paso y tamizar ambos ingredientes al un\u00edsono.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00b7&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;El <strong>colorante nunca debe ser l\u00edquido<\/strong>. Pod\u00e9is utilizar gel o colorante en polvo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00b7&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;Al unificar todos los ingredientes, <strong>el color bajar\u00e1 de intensidad<\/strong>. Si quer\u00e9is mantenerlo, deb\u00e9is agregar m\u00e1s color al comienzo de la preparaci\u00f3n.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00b7&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;Todos<strong> los <\/strong><em><strong>coquille<\/strong><\/em><strong> deben tener el mismo tama\u00f1o<\/strong>.
