que produce, ingrediente principal de la salsa holandesa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La salsa Isigny es una emulsi\u00f3n de <strong>yemas de huevos y mantequilla clarificada<\/strong>, sazonada con sal y pimienta negra molida.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tambi\u00e9n se pueden encontrar <strong>variaciones de la salsa holandesa<\/strong>, cuando le agregan pimientos rojos, perejil picado e incluso hay chefs que le agrega cayena.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" class=\"wp-block-paragraph\">La salsa holandesa es una receta <strong>muy f\u00e1cil de trabajar y lograr<\/strong>. Pero debe haber unos cuidados durante su preparaci\u00f3n para evitar que se corte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Es una salsa que <strong>se hace al momento<\/strong> de consumirla. Esperamos que se derrita completamente la mantequilla.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>\u00a1No la dej\u00e9is hervir! <\/strong>Por tanto, deb\u00e9is estar pendiente durante el derretido de la misma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Una vez se derrita toda la mantequilla, la retiramos de la cocina. <strong>No deb\u00e9is remover <\/strong>el resultado.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Este proceso <strong>busca separar el suero y la grasa <\/strong>de la mantequilla. Para la preparaci\u00f3n de la salsa holandesa solo utilizaremos la grasa de la mantequilla.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Luego de <strong>2 o 3 minutos de reposo<\/strong>, a\u00fan en estado l\u00edquido, debemos extraer toda la sustancia blanquecina que flota sobre la mantequilla derretida.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Debajo de la grasa de la mantequilla, de color amarillo intenso, ver\u00e9is un l\u00edquido blanco, ese es el suero. <strong>No debemos utilizarlo en esta receta<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Separamos las yemas<\/strong> de los cuatro huevos. Reservamos la clara para otra preparaci\u00f3n.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Batimos las yemas hasta conseguir montarlas. Como os dijimos, si se enfr\u00eda se solidificar\u00e1.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Para ello, la mejor opci\u00f3n es hacer la salsa en un <em>bol a ba\u00f1o mar\u00eda<\/em>.
